Prosciutto, Cantaloupe and Mozzarella

Every week I make it a goal to not overbuy at the grocery store to ensure I do not throw away unused food. This week I am cleaning out the refrigerator and could not bear throwing away my left over prosciutto. I decided to use the  prosciutto with cantaloupe and mozzarella and place it on a bed of fresh heirloom tomatoes. This replaced our usual green salad that we have with every meal.
Ingredients
Prosciutto
Cantaloupe
Fresh Mozzarella
1 Tomato
Olive oil
Kosher Salt
Freshly ground pepper
Slice the cantaloupe lengthwise and remove all of the seeds.
Then slice the cantaloupe into bite size pieces or use a melon baller to scoop out the cantaloupe. (I started off using the melon baller but quickly reverted back to slicing it. It was too hard for me but it would have been much prettier if I used the melon baller!)
Thinly slice your mozzarella or buy the balls of mozzarella.
Wrap your cantaloupe and mozzarella with a thin slice of prosciutto (do not use the entire slice that comes in the package). If I had toothpicks I would have secured the cantaloupe, mozzarella and prosciutto with a toothpick!
Serve on top of fresh heirloom tomatoes.
Drizzle with olive oil, kosher salt and freshly ground pepper.
TIP: You could always serve the prosciutto, cantaloupe and mozzarella as an appetizer at a dinner party! Pin It
