Ingredients
2 eggs
1 cup of all purpose flour
1 cup of skim milk
1/2 teaspoon of salt
Directions
Preheat oven to 450 degrees. Using nonstick spray, generously grease your pan.
In a medium bowl, beat eggs lightly, barely breaking the yolk. Gently stir in the flour, milk and salt until just smooth. You DO NOT want to OVERBEAT the mixture.
Fill custard cups 1/2 full. I used a ladel to divy up the mixture.
Bake at 450 degrees for 20 minutes then decrease oven to 350 degrees and cook for another 20 minutes. When you lower the temperature, make sure you do not open the oven. If you have to look at them, just turn on the oven light!
Remove from the oven and serve immediately.
These are best served with butter, strawberry butter, honey, jam and the list goes on.....I am going to learn how to make strawberry butter so stay tuned for that recipe in the weeks to come!
These popovers are so light and airy on the inside which makes them so heavenly.
