I try to only post my favorite, fool-proof recipes. However, I am human and of course not everything I make is that great. Usually I do not tell you about these mishaps but I felt this was worth sharing. Last week I mentioned that I served wild rice with my chicken. Well it was anything but wild rice! It seemed more like mush to me. I had already typed out all of the ingredients and directions to this recipe because I was confident it was going to be delicious. I was wrong. It was awful.
I am still having a hard time figuring out what went wrong. After I finished cooking the rice for an hour, I was supposed to let it steam for another 5 minutes which I totally forgot to do. I know this was an important step but I do not think it was a make or break for this recipe. I think this recipe called for too much liquid to cook the rice in and I also think it matters what kind of rice you buy. However, this recipe did not specify a certain brand of rice to buy so I think this could be another reason why my rice turned out the way it did. I had to share with you the ingredients and why I decided to cook this in the first place!

Ingredients
1 cup wild rice
1+1/4 cups chicken broth
1+1/4 cups water
2 tablespoons of unsalted butter
1 cup seedless grapes, halved
1/2 cup scallions, sliced in rounds, white and light green parts (2 scallions)
1 cup pecan halves, toasted and coarsely chopped
1 teaspoon grated orange zest
2 tablespoons freshly squeezed orange juice
1 teaspoon of freshly ground black pepper
